“Mexican Style” Chicken Chunks

Ingredients

4x

180g The Green Mountain” Chicken Chunks

150g

cooked green beans

3

carrots, finely sliced

2

red onions, cut into 3mm wedges

a little

fresh green coriander

a little

fresh parsley

3 tbsp

peanut oil

1

paprika powder

½ tsp

cumin

1 clove

garlic

1 pinch

chilli powder

salt, pepper

grated rind of half a lemon

1 pinch

oregano

So, here’s what you do:

1.

Mix the ingredients for the marinade and leave the chunks to marinate for half an hour.

2.

Heat some peanut oil in a pan, fry the chunks and red onion until lightly browned, then add the carrots and beans and fry briefly.

4.

Season with salt and pepper and finally mix in the herbs… that’s it! For a spicier taste… add chilli powder!

Tip: Other types of vegetables such as red kidney beans, red peppers or sweetcorn can of course also be used.
