1 | «The Green Mountain» meatloaf |
1 | red onion |
1/2 | red pepper |
1/2 | yellow pepper |
100g | celery |
1 | organic lemon |
4 tbsp. | olive oil |
Salt, freshly ground black pepper | |
1/2 bunch | chives |
2 sprigs | basil |

Prepare meatloaf according to package instructions

Meanwhile, peel and finely dice onion
3.
Finely dice peppers and celery; zest and squeeze lemon
4.
Sauté onions in 1 tbsp. oil until transparent; add peppers and celery and sauté for 3 minutes, turning frequently
5.
Season with salt and pepper, add lemon juice
6.
Remove from heat, add remaining olive oil and chives
7.
Slice still-warm meatloaf into thin slices and serve with the vegetables and basil
Goes great with Gschwellti [potatoes cooked in their skins]
