Ingredients

«The Green Mountain» meatloaf

1

red onion

1/2

red pepper

1/2

yellow pepper

100g

celery

1

organic lemon

4 tbsp.

olive oil

Salt, freshly ground black pepper

1/2 bunch

chives

2 sprigs

basil

So, here’s what you do:

1.

Prepare meatloaf according to package instructions

2.

Meanwhile, peel and finely dice onion

3.

Finely dice peppers and celery; zest and squeeze lemon

4.

Sauté onions in 1 tbsp. oil until transparent; add peppers and celery and sauté for 3 minutes, turning frequently

5.

Season with salt and pepper, add lemon juice

6.

Remove from heat, add remaining olive oil and chives

7.

Slice still-warm meatloaf into thin slices and serve with the vegetables and basil

Goes great with Gschwellti [potatoes cooked in their skins]
