Mince with Swiss macaroni

Ingredients

3

tart apples (e.g. Boskoop)

1-2 tbsp.

sugar

1

cinnamon stick

1

onion, finely chopped

30g

butter (or vegan alternative)

1

«The Green Mountain» mince

2 tsp.

tomato paste

200ml

bouillon

1

bay leaf

300g

hörnli [Swiss macaroni]

100g

grated Sbrinz hard cheese (or vegan alternative)

2 sprigs

parsley, roughly torn

So, here’s what you do:

1.

Peel, quarter, core and roughly chop apples

2.

Place in a pan, add sugar, cinnamon stick and 100ml water

3.

Bring to a gentle boil, cover and simmer over a very low heat for 10-15 minutes

4.

Heat butter in pan, sauté mince and onions, stirring frequently

5.

Add tomato paste and briefly sauté with the mince and onions

6.

Add bouillon and bay leaf

7.

Simmer gently for about 10 minutes

8.

Season with salt and a little pepper

9.

In the meantime, prepare hörnli [Swiss macaroni] according to package instructions

10.

Serve the hörnli with the mince; if desired, sprinkle with Parmesan and parsley to taste and serve with the applesauce
