3 | tart apples (e.g. Boskoop) |

200ml | bouillon |
1 | bay leaf |
300g | hörnli [Swiss macaroni] |
100g | grated Sbrinz hard cheese (or vegan alternative) |
2 sprigs | parsley, roughly torn |

Peel, quarter, core and roughly chop apples

Place in a pan, add sugar, cinnamon stick and 100ml water

Bring to a gentle boil, cover and simmer over a very low heat for 10-15 minutes

Heat butter in pan, sauté mince and onions, stirring frequently
5.
Add tomato paste and briefly sauté with the mince and onions

Add bouillon and bay leaf

Simmer gently for about 10 minutes

Season with salt and a little pepper

In the meantime, prepare hörnli [Swiss macaroni] according to package instructions

Serve the hörnli with the mince; if desired, sprinkle with Parmesan and parsley to taste and serve with the applesauce
