Flattened Meatballs with Ajvarr

Ingredients

1

«The Green Mountain» mince

Salt, freshly ground black pepper

5 tbsp.

ajvar

2

eggs (or vegan alternative)

3 sprigs

of parsley, roughly torn

40g

butter (or vegan alternative)

2

red onions, cut into thin rings

1

head of lettuce, e.g. Lollo Bionda

2 tbsp.

white wine vinegar

1 tbsp.

apricot jam

4 tbsp.

olive oil

So, here’s what you do:

1.

Carefully mix salt, pepper and 2 tbsp. ajvar into the mince; carefully mix in eggs and parsley

2.

Shape the flattened meatballs [Hacktätschli] as desired and fry them on all sides in hot butter for 8-10 minutes, turning often

3.

For the last 3 minutes, add onions to pan and sauté until transparent

4.

Wash lettuce thoroughly and spin dry

5.

For the vinaigrette, mix vinegar with salt, pepper, jam and olive oil

6.

Pour vinaigrette over the salad and serve with the meatballs

7.

Add remaining ajvar
